Pink Himalayan Salt

This thick 8-by-11-inch piece of solid salt, mined in Pakistan, can be used for cooking. It will not melt when placed directly on a stove burner and heated gradually. Lightly brushed with butter or oil, it will fry eggs, shrimp, fish steaks or thin slices of beef that come away with quite enough salt. The slab can go in the oven or on a grill and can also be chilled or even frozen to use for serving sushi or other seafood. It will retain the cold for an hour or more. Scrub it with a stiff brush or plastic scouring pad after use and rinse it quickly. It must be thoroughly dried overnight before heating again. The slabs are $40 at Sur La Table stores and surlatable.com. Slabs in a variety of sizes are also sold at saltworks.us.

Nancy, after just one dinner with me, has identified a horrifying, unforgivable eating tic: apparently I close my eyes when I chew something really delicious? In my defense, we were at Fatty Crab and a lot of stuff was amazing, especially the fatty duck (above) and the Chinese broccoli with salted fish and the pork buns (although I’m getting rapidly spoiled by/suspicious of the number of places that make an unbelievable pork bun).

I’m going to work on it, Scotch-taping my eyelids open if necessary. Anyway, important: if you go to Fatty Crab, see if they will sell you just the shot of spicy pickle juice that is normally the middle of the “recession special” (whiskey + pickle juice back + PBR tallboy) and pair it with a Porkslap or something instead. It’s the tastiest thing on the menu.

Speaking of Romano, now that it’s cold out, we’ve been auditioning bars for the role of Official After-Work Clubhouse. The Rusty Knot just stormed into the lead (pretty much on the strength of $1 drafts, a free jukebox, and the sheer weirdness of the decor, like the mural above), though WXOU remains in the hunt.

My dad’s claims about his homemade fare notwithstanding, this is pretty good too: margherita and mast’nicola (lardo, pecorino romano, basil) pizza from Kesté.

Romano, who wrote about the “haute-Neapolitan pies” at Kesté, Motorino, Tonda, etc., in May, got recognized by the owner when we walked in, which is extremely baller.
